How I Prep and Organize My Produce for the Week

Let’s start out by saying that before this I have never had #fridgegoals. It’s usually a hot mess in there. I am not much of a “meal prepper” (I prefer to eat things same day), however after 6 weeks of isolation in my apartment I figured it might be a good time to try out the whole produce preparation/fridge organization thing. 🙂

I’ve been getting weekly produce deliveries from local farms, where I order enough to last the whole week. Originally I was just throwing everything into my fridge, and then when I wanted to make something (roasted broccoli, a green juice etc.) I would take out what I needed, wash it, chop it and so on. However what I found was I was often not motivated enough to do that, so instead of making the green juice I would just grab something else that didn’t involve any effort. I was wasting produce during a time when food cannot be wasted, so I knew I needed to make a change.

How I Prep and Organize My Produce for the Week

So I started prepping ALL of my produce the day I get it. That means I am washing everything, chopping what needs to be chopped, and then organizing the fruits and vegetables in my Rubbermaid Brilliance containers. This way the broccoli for roasting is already chopped and ready to go, same with the celery and carrots for juicing. Since I started this, I have been WAY more motivated to use everything that’s in there. I can visually see what I have, it’s clean and organized, and the produce stays fresh for a really long time in the air tight containers.

I’ve used a million different types of food storage containers in the past, but I really LOVE this Rubbermaid Brilliance set! The 2-latch design provides an airtight and secure seal to lock in freshness. You can shake a soup around in there and there is no risk of spilling at all. There are built-in vents that allow steam to escape, so you can microwave leftovers without removing the lid. They are BPA-free (always important), dishwasher safe and can also go in the freezer. The set I have comes with 32 pieces, and I use the little containers for snack prep (sliced cucumber, hummus, etc.), which helps me reach for healthy options when I am hungry because it’s ready to go. 

I thought this was going to be an overwhelming task, but to be honest the washing and chopping takes very little time and I was able to organize my ENTIRE fridge in less than an hour. Now the goal is to keep it looking this way 😉

Carrot Cake Cupcakes


Crushed pineapple, pecans, and grated carrots make these cupcakes super-moist with a craveable texture. Homemade cream cheese frosting is a must for this classic!

I had no plans to make another version of carrot cake this year. I'd already baked a rabbit-shaped carrot sheet cake just before Easter, so I'd already crossed it off my spring baking checklist. But then I received the most beautiful bunch of organic rainbow carrots in my produce delivery box. I subscribe to a service that ships imperfect organic fruits and vegetables, and I have yet to receive something that looks anything less than scrumptious. It's really been nice during this time at home to have fresh vegetables. It's the first thing we run out of, and getting a shipment every two weeks keeps us eating well.

I literally LIVE for a creamy pasta. I feel like I’ve written this intro more than once on here, but it’s so true! I was a fettuccine alfredo kid, and if you told me I could never have marinara again I’d be fine.

This Creamy Turmeric Mac and Cheese is dairy-free, can easily be made gluten free and is SO EASY. Soaking cashews always puts people off (including me), so if you don’t feel like planning ahead I’ve got a great tip below. My one year old also loves this pasta! So does my husband, who is not as easily won over 😉

Creamy Turmeric Mac and Cheese

Serves 4

  1. 1 box of pasta
  2. 1 cup of cashews, soaked in water for at least 4 hours or boiled (*see below)
  3. 1 cup of unsweetened almond milk
  4. 1 teaspoon of garlic powder
  5. 1 tablespoon of olive oil
  6. 1 tablespoon of turmeric powder
  7. sea salt and a generous few dashes of black pepper to taste
  8. reserved pasta water
  1. cook pasta according to package directions.
  2. drain the cashews and add them to a food processor with the almond milk, garlic powder, olive oil, turmeric, sea salt and pepper and process until smooth.
  3. if very thick, *slowly* add in reserved pasta water and process until the sauce is very creamy (you might not need any)
  4. taste test for more salt/pepper needed and add to the cooked pasta
  1. *if the cashews aren’t pre-soaked, add them to boiling water and then remove the pot from heat. let them soak for 15 minutes.

Peanut Butter Pie


Classic no-bake peanut butter pie is rich and creamy with a crisp chocolate cookie crust. It's quick to make and a real crowd-pleaser!

It's been over two months since we've eaten any kind of restaurant food or take-out, so I confess: I am a little sick of my own cooking. This past week my usual creative dinners were replaced with prepackaged ravioli, canned soups and pop-tarts for dessert. I simply ran out of steam and interest. However, I plan to do better next week armed with simple oldie-but-goodie recipes that I haven't made in while. This peanut butter pie is one of those recipes, and a wonderful comfort food. Even though I have made it countless times, I have never posted it here. Today's the day!

Whipped Tiramisu Coffee


Dalgona coffee, also known as whipped coffee, is the layered South Korean drink that is taking the internet by storm. This version, made with instant powdered espresso, is inspired by the flavors of Tiramisu and served with crisp savoiardi cookies on the side.

For the past two months I haven't been able to scroll through any social media feeds without a recurring sight – glasses of milk with fluffy mounds of whipped coffee floating on top. Dalgona coffee is arguably the beverage of quarantine 2020. As a coffee enthusiast, I've been dying to try it for myself. It is made with instant coffee but the only kind of instant coffee I keep on hand is espresso powder. I'm happy to report that it whips into the most luxurious, sweet and intensely caffeinated clouds fit for topping ice cold milk.

The bold flavor of the whipped espresso reminded me of My Favorite Tiramisu recipe, so I was eager to bring some of those flavors to this unique coffee treat.
